Thomas Selzer, general manager of Instructional Food Services at OCC, will teach a series of workshops on the art of ice sculpturing on Fridays, April 4 through April 25, through OCC Community Education. Classes meet from 9:00 a.m. to 1:00 p.m. in the Le Bard Stadium Field House, Room 110.

A certified professional ice carver, Selzer will teach students how to create beautiful ice punch bowls on April 4, followed by amazing ice luges on April 11. Sculpting ice logos will be offered on April 18; the class is a pre-requisite for an April 25 workshop on carving ice tables.

Students will learn how to present and display sculptures for large catering events, as well as the process of making ice, how to use ice sculpturing tools and safety rules. Students will experience transforming a transparent, fragile, cold and wet block of ice into something “alive,” according to Seltzer.

Registration is $50 for each class, which includes tools, equipment and gloves. Participants are required to wear chef’s clothes and slip and wet-resistant shoes. Sign up online at or call (714) 432-5154. Registration can also be completed at the OCC Bursar’s Office at (714) 432-5880, x1.

Before joining OCC Food Services, Selzer worked for 15 years at the Hyatt Hotel in Irvine as sous chef, restaurant chef, garde manager and executive sous chef. He is a certified executive chef.
